Preparation

Arrange the chicken and bring it to a boil in water for about 30 minutes. Allow to cool and cut into pieces.
Apart, mix the chopped onion, parsley and breadcrumbs. Add the egg, pepper and cinnamon and knead until you get a very homogeneous mixture. Bring the oil, saffron, chopped parsley, lemon juice and a little syrup to cook the chicken in a saucepan.
Bring to a boil, rectify the salt and add the chicken pieces, previously wrapped in the onion dough with the egg.
Cook for 30 minutes. When ready, place the chicken pieces drizzled with the sauce on a platter and garnish with green olives.
