Preparation

wash the clams(cockles) and soak them in salted water for 12 hours (2 tides).
cut the garlic into slices and brown in olive oil. add the cockles and let them open over a low heat, stirring occasionally.
remove immediately from the heat (not to dry) and sprinkle with chopped coriander and pepper and drizzle with lemon juice.
serve with lemon slices.
