Preparation

peel the prawns. wash and drain the spinach and remove the long stems. - Put the noodles in boiling water and leave for 3 minutes until they are thickened and soft; - heat the oil in a saucepan and fry the onion and ginger over medium heat for 8 minutes, stirring regularly - add the chilli with the broth, soy sauce and sugar bringing to a boil - reduce heat and bring to a simmer for 15 minutes - add the chives - transfer the noodles to large bowls and top with the prawns and spinach leaves - pour the boiling broth and serve immediately - arrange the dressings in small containers in the center of the table, along with the salt, pepper and sugar.
