Preparation

To make Amlou, you must first toast the almonds in the oven for about 15 minutes. Preheat the oven to 190º and then place the toasted almonds. Remove when they are crispy and, once cooled, you can chop them into powder.

The next step is to add oil and mix everything, until it becomes a paste. Add the oil gradually and not all at once. It is very important that the process is slow for the almond powder to absorb the oil.

The texture depends on your taste: whether you want more or less consistent. If you want more liquid add more oil, and if you want less do not add as much.
At the end, add the honey and you can even put it in a jar or bowl to serve at the table. Amlou is usually eaten with bread, toast and even crepes. Store in a cool, dry place.
