Place the cucumber slices in a cocktail shaker and blend with a mixer or the back of a wooden spoon. Add Pimm's, lemon juice and sugar. Add ice and shake vigorously. Strain the Pimm's mixture into a glass filled with ice and cover with ginger beer. Garnish with a slice of cucumber and lemon slices.
Preparation
- 1/2 Japanese cucumber, sliced (save one piece for garnish)
- 60 ml Pimms no. 1
- 1 tablespoon lemon juice
- 1/4 teaspoon sugar
