Preparation

wash the meat and put it to simmer in a wide pot, with the carrot, onion and pepper cut into large pieces, salt, assorted vegetables and three liters of cold water.
remove the meat and strain the broth, heat the oil with the colored chili pepper, add the vegetables that have not been prepared and the semi-cooked meat.
fry for a moment and then add the broth and seasonings.
cook over moderate heat until everything is cooked.
add the washed rice and finish cooking.
When serving, put on the table a dish with ginned green peppers and another with chunks of dried goat chili pepper, in addition to the irreplaceable bowl with finely chopped parsley or coriander.

Ingredients

  • ¾ kilos of beef rib can be replaced by ossobuco or cover if desired
  • 6 potatoes
  • 1 carrot
  • ½ kilo of pumpkin
  • 1 corn 1 paprika
  • ¼ kg. of green beans
  • ¼ kg. of peas
  • 1 small onion
  • assorted vegetables
  • ½ tsp. oregano.
  • ½ tsp. cumin
  • ½ cup of rice
  • colored chili if desired.
