Preparation
cut the chicken into pieces and wrap each portion in a slice of ham or smoked bacon. put the prey thus prepared on a roasting pan and lightly sprinkle with the following mixture: 2 tablespoons of black sugar, 2 tablespoons of flour and pepper. put the roasting pan in the oven rather hot and leave a few minutes until the chicken fat begins to melt and is somewhat golden. then reduce the heat, add a half cup of broth to which 1 tablespoon of butter and 1/2 grated onion will have been previously added. cook in a medium oven for about 35 minutes, taking care to water the prey in the juice that is forming. then place the prey in a source and with the juice make the following sauce: add 1/2 cup of milk, 1/2 of water and mix with a tablespoon of flour. pour over the chicken and serve with fried bananas and cooked rice.
