buy a good piece of dogfish without skin and if possible cut into 4 cm cubes. This shark-like-looking fish is usually sold clean and in one piece. Prepare a marinade by mashing paprika, oregano, cumin and salt in the mortar or mincer.

the fish is placed in a source and it is smeared with the flock diluted with vinegar. it is watered with abundant water. It is reserved in the fridge and left to marinate overnight. The next day, the dogfish are drained well, passed through flour and fried in hot oil.
