Preparation

cook the bacon until golden brown, add the onions and cook until soft and golden all over. add the flour and cook for about 2 minutes, add the boiling broth and turn quickly so that it is well incorporated. add the potatoes, thyme and bay leaf. once the potatoes are done, season with salt. add the fish, a few minutes. serve with a little crème fraiche, toasted bread and parsley.

Ingredients

  • 1 kilo fresh white fish, of various kinds, hake, fresh cod, sea bream ...
  • 1 liter of fish broth (you can substitute half a liter of bottled clam broth and half a liter of water)
  • 150 grs. salted bacon (similar to non-smoked bacon) cut into small pieces and blanched 5 minutes
  • 3 large onions, thinly sliced
  • 3 large tablespoons of flour
  • 5 large potatoes (of which in English are called waxy) sliced
  • ½ teaspoon thyme
  • 2 bay leaves
  • salt and pepper
  • creme fraiche, toasted bread cubes and chopped parsley as garnish
