Preparation
wash the guatitas very well with warm water with bicarbonate of soda, brushing them and rinse them in cold water. Boil them for about an hour in the pressure cooker with salt to taste, pepper, the carrot and the sprig of vegetables. Once cooked, let them cool and cut them into thin strips about 2 inches long.
In a saucepan, add 1/2 cup of oil and fry the finely chopped onion, the peeled and squared tomatoes, pepper, salt, vegetables, bell pepper, the crushed garlic clove and the oregano. put the guatitas on top and cook until the carrot is soft. Add the cooked peas separately and thicken with the teaspoon of cornstarch dissolved in 1/2 cup of milk. serve with steamed potatoes.

- 1 1/2 cups of peas

- 1 sprig of assorted vegetables
- 50 gr of grated cheese
- 1 clove of garlic
- 4 potatoes
- 1/2 cup milk
- salt and oregano to taste
