clean the mushrooms without cutting them, mix them with the flour, pass them through the mixture of eggs and grated cheese and then through the breadcrumbs. they will be fried at the last moment with the sauce already prepared. Prepare the sauce by mixing the vegetables and the boiled eggs with a mixer and make a vinaigrette adding mustard, lemon, oil and cream, stirring everything with a spoon and season.
it is eaten very hot.

Ingredients

  • 800 gr. of assorted mushrooms,
  • 50 gr. Of flour,
  • 3 eggs,
  • 60 gr. grated Parmesan cheese (the best would be ´´sbrinz´´ but the Swiss do not miss a single one for export),
  • 200 gr. of breadcrumb crumbs,
  • for the sauce:
  • 30 gr. spinach (don't think they are few),
  • 20 gr. of parsley and tarragon,
  • 30 gr. chives,
  • 2 dl of oil,
  • half a dl of lemon juice,
  • half a tablespoon of semi-strong mustard,
  • half a dl of heavy cream,
  • 2 hard-boiled eggs,
  • salt and pepper.
