Preparation

In a large pot, fry the garlic, chili peppers, herbs and pepper. add the tomato paste and fry for a moment more. add the seafood and fry for a few seconds. add half the water and bring to a boil.
when the water boils, add the rice. Bring the other half of the water to boil in a separate pot, when it starts to boil lower the flame. stir the rice regularly and add water from the other pot as needed to keep the water level until the rice is very soft.

serve hot accompanied by avocados or tostones.

  • 1 kg of assorted seafood
  • 2 1/2 pounds of rice
  • 3/4 gallon of water
  • 4 tablespoons tomato paste
  • 5 tablespoons oil
  • 1/4 cup diced chili peppers of different colors
  • 1 pinch of oregano
  • 1 teaspoon minced garlic
  • 1 pinch of ground black pepper
  • 1/4 cup celery chopped
  • 1 tablespoon of finely chopped parsley
  • 1 tablespoon chopped coriander
  • 1 tablespoon of Tabasco sauce
  • salt to taste
