Preparation

loin medallion
wrap the tenderloin medallions with the bacon and season with the thyme and minced garlic. salt and let stand. cook the tenderloin on the grill, sealing on both sides. finish cooking in the oven.

Garrison
cook the spinach in the cream, along with the garlic. season to taste, then process.
add the eggs and sift the mixture.
Pour into molds lined with plastic wrap and cook in a bain-marie oven. they can be heated in the microwave, once cool.

mounting
heat the demiglace sauce and serve.
garnish with some quartered cherry tomatoes.
