Pour the gin, cherry brandy and Benedictine into a tall glass. Add the ice and and 4 drops bitters of Angostura or to your liking. Stir well until the outside of the glass is cool.
Pour the mixture into a tall glass, then add the pineapple and lemon juice and stir gently. Complete with sparkling water and decorate.

- 25ml dry gin

- handful of ice, to serve
- a few drops of Angostura bitters
- 50ml pineapple juice
- 25ml lemon juice
- sparkling water to fill
- For the trim
- 1 thin slice of fresh pineapple (optional)
