Preparation

Cut the chickens into quarters and keep them cold for 3-4 hours soaked in the wine. turn the oven to 450ºf. Place the chicken quarters in a pan, sprinkling them with salt, pepper and paprika. top with the wine, onion and parsley. Bake 25 minutes on one side and then 25 minutes on the other, drizzling occasionally with the sauce.

  • 2 chickens of 2 lb. each
  • 1/4 cup white wine
  • 2 tbsp. chopped parsley
  • 2 tbsp. chopped onion
  • 1/4 lb. of butter
  • salt, pepper and paprika to taste
