wash the ox leg very well; then, in a container with enough water, cook for 5 hours until soft enough.

the bone is extracted and the resulting cooking is strained and liquefied in the same water or broth. Once sufficient broth is obtained, return to the heat and add the broken leg, beating constantly until it reaches the clotting point. Pour into a tray or mold and let it cool.

note: it is recommended to use a pressure cooker, otherwise the cooking time will be doubled. to this sweet you can add the flavors of coconut, vanilla, banana, fennel, among others, according to the taste.
