Preparation
Start by cleaning the gizzards thoroughly.
Skin the tomatoes.
In a pressure cooker, cook the gizzards.
Then in a pan sauté the onion, garlic, red pepper, green pepper, both finely sliced and the bay leaf in olive oil.
When it starts to brown, add the tomato and salt and let it cook a little more until you start to undo the tomato.
Add the gizzards and add a little water for cooking the gizzards.
Add the white wine and the mint and let it cook over a low heat until it is fine.
