Preparation

The ears are cleaned very well, put in a pan with salt and lightly boiled, then they are removed and they are roasted in a coal fire, after they are roasted, they are cut into small pieces.
Chop the garlic and the coriander, place the ear in a bowl and mix with the centers and the garlic.
Pour the oil and vinegar.
The ear should stay for a few hours in this marinade, stirring occasionally.

  • 2 dl of olive oil
  • 0.5 dl of vinegar
