Preparation
Prepare the salmon 3 days before finishing in salt and herbs. To do this mix the salt, the chopped dill, the anise and the pepper and sprinkle over the salmon fillet. Cover with honey and a little lemon juice.
Reserve in the refrigerator and turn every 12 hours.
Finalize the recipe.
Mix the quark cheese with a little finely chopped ceboulete, white pepper and a little lemon juice until you get a creamy consistency.

To present prepare a small potato pancake, place the quark on top and decorate with slices of sliced salmon. Garnish with dill and lemon
