Preparation
pour the sugar into a dry skillet. heat it slowly without stirring it until it is light colored and frothy. pour this caramel into a hot and dry circular mold, spread the caramel around the edges and return the excess caramel to the pan. add the boiling water to the pan, bring to a boil until the caramel has melted. cool.
beat the sugar and eggs a little. heat the cream and vanilla without bringing it to a boil, and add it to the eggs. pour the dough into the mold and cover it.
solidify the flan in a saucepan. cover the mold halfway with water. also cover the saucepan which will remain like this for approx. ¾ hour. the water should not boil. remove the flan from the mold while it is warm. The cold flan is served with ice cream.
