It is a very manchego dessert (especially from Toledo) and very Christmas, although it should be consumed throughout the year. it is very nutritious and delicious. We recommend that children participate in making the figures. they will have a lot of fun.

we grind the almonds as fine as possible. if we can reduce them to dust, better. We mix the ground almonds, the sugar, the lemon zest, a teaspoon of cinnamon and the eggs (we reserve the yolk of an egg in a plate).

with your hands, knead the whole mixture very well and for a long time, until you get a smooth and homogeneous dough. It can be kneaded with the help of a mixer or mixer. although we recommend doing it the traditional way, with your hands.

We let this dough rest for a few hours in a cool and ventilated place.

after resting we take pieces of dough and make figures. In a plate we beat the egg yolk and with a brush (which we always use for cooking) we paint the figures.

We put the figurines in the previously heated oven. when we see that they are golden we can take them out. We put them in a source and cover them with a cloth so that they do not dry out.
