Preparation
Once cleaned, cut the octopus into regular pieces.
Meanwhile, chop the onion and the very thin garlic, pour olive oil and a little oil in a saucepan, allowing to heat up a little.
Add the garlic and onion, and sauté.
Add the cloves, the coriander branch and the tomato, leaving it to boil a little.
Add the octopus, a little water, season with salt and pepper and continue to cook.
When the octopus is almost cooked, add the rice, a little white wine, water if necessary and more chopped coriander.
Once cooked it should be boiled immediately.
