Preparation

We parboil the previously soaked pallares the day before. It is advisable to change the water in the pot up to two times. When the stew boils, we can add cold water so that the pallar becomes wrinkled (it is a cooking secret). We complete the cooking by adding the salt, the pieces of pork meat and the chopped bacon slices. Separately, prepare a dressing with the garlic cloves, pepper, chopped onion and oil. Finally, we add the dressing to the lollipops when they have already taken point, and the water has partially evaporated. it can be served with rice and creole sauce.
