Preparation

The night before it is soaked in water to remove excess salt, the next day it is washed well and parboiled for fifteen minutes. then it is cut into small pieces. Prepare a dressing with oil, garlic, onion, tomato, stew and the sweet pepper. add the paiche and cook for five or ten minutes and at the end add the chopped cilantro. Serve with rice and boiled cassava. Bon Appetite.

  • half a kilo of dry salty paiche
  • a large onion
  • two tomatoes
  • a teaspoon of toothpick
  • two sweet peppers
  • half a tablespoon of ground garlic
  • sacha cilantro to taste
  • a quarter cup of oil or lard
  • salt pepper and cumin to taste.
