Preparation

Remove the skin of the tomato and cut into small pieces, cut the pepper into small strips.

In a saucepan, heat a drizzle of oil and sauté the onion. Add the tomatoes, peppers, chilli peppers and cook for about 5 minutes, until the tomato crumbles and forms a thick sauce.

Add 2 tablespoons of cider vinegar, to cut the sweet taste, and stir.

Season with pepper to taste, add the egg and let it poach, about 3 minutes, covering with the lid.

Sprinkle with chopped chives and serve. Enjoy your food!
