soak the cod for at least 12 hours, changing the water several times to remove the salt. remove skin and pimples and fray. sauté the onion in olive oil, adding cod, tomato concentrate, bay leaves, cloves, wine and water. cook for 30 minutes, correcting salt if necessary. put the polenta on a platter, forming a crown. in the center, place the cod and sprinkle with parsley.
