leave the lentils to soak from the night before.
Cook the rice on one side in the classic way, with double the amount of water and leaving it over low heat until all the liquid is consumed.
In a pot, with a jet of hot oil, fry the chopped onion, the tomatoes and pepper, also chopped, the garlic, the cumin, coriander, achiote and salt. mix all the ingredients well and add the lentils. keep stirring and adding the water. When it starts to boil, lower the temperature and cook for an hour.
On a griddle with a little oil, prepare the fillets so that they are done on both sides.
The final presentation of the dish is made with a mountain of white rice accompanied by the fillet of beef and skirting the lentil stew.
