Preparation

the prawns and crayfish are washed and drained and salt is added. monkfish and cuttlefish are cleaned and chopped. the tomato is peeled and chopped and the garlic, parsley and a little lemon juice are crushed separately in a mortar.
In a saucepan or paella pan, pour the oil and when it is hot, fry the prawns and scampi; then they are removed from the fire and reserved. Then fry the monkfish, cuttlefish, chopped tomato and paprika in the same oil. it is very important that it be done in this order.
Once the sauce is prepared, add the fish stock and salt if necessary. when starting to boil add the noodles. after 5 or 6 minutes add the prawns and the scampi. also the garlic and parsley mash and saffron. Cook for another 16 to 18 minutes.
After this time, remove the stew from the heat and let it rest for 5 minutes so that the noodles are soaked with the cooking broth
