after being prepared, sprinkle the partridges with a few pebbles of salt. let them stay like that for a while and then roast on the coals. as soon as the partridges are blond on the outside, they withdraw, leaving neither to be burned nor to be roasted completely.
partridges are placed on a tray.
meanwhile, olive oil and vinegar have already been mixed. the partridges are brushed with a wet cabbage leaf in this mixture and taken to the oven to roast. when the partridges are completely roasted, sprinkle with the remaining sauce.
accompany with boiled cabbage, chips or spaghetti (herbs).
