Preparation

Beat the beans well until they form a homogeneous mass.

Repeat this step with the rest of the beans adding a cup of the reserved liquid, but without the seasonings.

Mix the two parts of the dough and set aside to rest for at least half an hour.

Beat the dough a little bit.

Gradually place the spoonfuls of the dough.

In a skillet with plenty of boiling oil, add 2 tablespoons of palm oil.

Fry dumpling balls.

Remove the dumplings when they are fried and golden. Drain on absorbent paper and keep them warm in the oven.

To serve the dumplings, cut each one in half, without separating the parts. put strong pepper sauce inside and cooked prawns (or vatapá in Bahia).

The trick of acarajé is to keep beating the dough while the others are frying (the dough starts to get watery when parked).

Serve warm and have a good appetite!

Ingredients

  • 1st soak overnight in plenty of water:
  • 2 cups full of marcassa beans (or fradinho)
  • 1 teaspoon salt
  • 1 clove of garlic, pounded
  • 2nd drain the beans well, keeping the water for future use. wrap the beans in a dish towel and rub vigorously to remove the skins.
  • 3rd place half of the beans in the blender cup and add:
  • 1 cup of the reserved liquid
  • 2 chopped garlic cloves
  • 1 1/2 teaspoon salt
  • 1 teaspoon of strong sauce
  • pepper (optional)
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of royal powder (baking powder)
