clean the shank by rubbing with lemon. chop the onion, crush the garlic and mix the white wine, salt and pepper. if you want, add the bacon broth. leaving the veal shank in this vineyard overnight. the next day put the ham on a baking sheet, sprinkle with the vine and the oil. chop the carrot and celery well, add the ham. hold bacon slices with toothpicks and simmer for 2 hours. when serving, mix the flour and cream and pour over the ham. take it back to the oven to brown it.

- 1 cup (tea) of dry white or red wine
