Preparation

Parboil the sweet potatoes, peel them and puree them. then we put them on the fire along with the sugar. When the puree boils, remove it and add the lightly beaten yolks little by little, stirring continuously. Next, we put it back on the fire and add the cinnamon powder. We move a few more minutes until we see the bottom of the pot. finally, we remove it from the heat, we wait for it to cool a little and we make small balls. sprinkle with white sugar and serve.
