Preparation

1. Place a pan with water on the fire. When it starts to boil add the cod and let it cook for about three minutes. Place the cod on a plate, remove the bones and skins and shred it in splinters. Reserve.
2. Wash the potatoes and cook them in their skin in water seasoned with a little salt.
3. In a baking tray, place a sliced ​​onion at the bottom and the cod and potatoes cut into quarters on top. Place another sliced ​​onion over the cod and potatoes, the skinless tomato broken into pieces and the pepper cut into strips. Drizzle with olive oil and season with thyme and pepper.
4. Place in a preheated oven at 180ºC for about 45 minutes.
