Preparation
wash, scale and gut the fish (palometa), leave it in a container with lemon and salt to taste for 30 minutes. proceed to take to the oven at a temperature of 300ºC to 350ºC for 25 minutes. Serve hot accompanied by a green or ripe hartón plantain, baked yuca, a small portion of rice and lemon.
