step 1: cut the sea bass into thick medallions (slices); marinate for 20 minutes in a preparation of crushed garlic, salt, squeezed lemon juice and a few drops of Worcestershire sauce. remove the slices and go through flour, grill or fry in a pan. they are cooked with little oil for 8 to 10 minutes.
