Preparation

Wash the beans and soak them in the water with a chili pepper; when they are swollen, cook them in that same water until they soften (if possible in a pressure cooker).

Heat the oil and sauté the minced onion, the crushed garlic and the other pepper, also minced or ground; Add this sauce with a cup of beans and add the salt, pepper, oregano, cumin, bay leaf and sugar; let them boil for about an hour more.

Then add the vinegar and dry wine, and cook over low heat for another hour.

When serving, add the two tablespoons of olive oil.
