chop the onion and marinate in the lemon juice together with salt, pepper and the ground chili. the potatoes are parboiled, and then peeled and mashed into a dough. the potatoes are mixed with the lemon, onion and oil. the dough is shaped using a mold or spatula. Garnish with the olives, the cut hard-boiled eggs and the fresh cheese.

traditionally, the Lima cause is filled with two layers of some ingredient, usually canned tuna. the filling can be placed in horizontal layers or even rolled, obtaining a cylindrical mold (pionono).
