Preparation
the burriés are washed very well, passing them through several waters. soak for two to three hours, taking care to add lemon juice to the water. in a pan with water, add a little salt and bring to the heat. when the water boils, pour the burriés and leave for five minutes. drain the water, let the burriés cool a little, remove them from the shell with a pin passed through the flame and season them with oil and vinegar.
