Preparation

cook the rice so that it is well shelled and let it cool well it is better to do it overnight. the rice is cooked without salt or fat.

If you are using shellfish, fish, or chicken, cook them first, then cut them into thin strips or pieces. You should do the same with pork, ham or ham, and with eggs if you prepare them in the form of omelets.

wash and clean beans and chives well. If you don't have beans, you can use raw cabbage cut into strings and also other vegetables like peppers, cucumbers, etc. and cut into strips.

heat the oil (for this recipe it must be corn, peanuts, sunflower, soy, etc., as it has no definite flavor and not olive oil, which, due to its characteristic aroma and flavor, changes the flavor of the fried rice), fry the cloves of crushed garlic and when they start to look golden add the cold rice and start to stir it until you see that the rice is hot.

Add little by little and while stirring, all the ingredients more or less in the same order as they appear in the recipe. if possible, the ginger root should be grated directly over the rice and chives are always the last thing added. Serve hot with additional Chinese sauce so each person can add more to their liking.
