all the ingredients are cut into small pieces. It is important to peel the tomatoes, as the skin is uncomfortable to eat.

Heat extra virgin olive oil in a frying pan and fry the onion and green pepper over low heat with a little salt. When they are golden, add the zucchini and fry it for 15 minutes. when the zucchini is tender add the chopped tomato.

let everything cook over a very low heat (important) for 30 minutes. we have to turn it every bit so that it does not stick.

The fritá can be eaten as is or accompanied by fried eggs with fried chorizo, a good grilled steak, a fish, etc. what you want. that is why when the fritá is made, a large quantity is made. it keeps wonderfully well in the fridge.
