Preparation

Its preparation is very easy: the pasta is cooked with the lemon rind, the cinnamon stick, a pinch of food coloring and another pinch of salt. When it is half done, add the milk and a third of the sugar. When the pasta is boiled, put it in a container to cool.
In another small container we put on the simmer a little broth from the boil, the cinnamon powder, milk and the rest of the sugar and stir for a few minutes. this is poured over the macaroons and served cold.

  • the sant joan pasta is a typical dish from the region made with tallarins (not pasta) cooked in lightly sweetened milk, cinnamon and lemon peel.
  • ingredients for 6 people:
  • 1/4 kg of talarins (macarroni),
  • 1 kg of sugar,
  • 1 liter of milk,
  • Water,
  • cinnamon stick,
  • cinnamon powder,
  • lemon peel,
  • salt and food coloring.
