start by placing a pan of water seasoned with salt and a drizzle of olive oil over the heat. when the water is boiling in a bunch, put the dough and cook until it is ´´alto´´.
meanwhile prepare the sauce. bring the margarine to a boil and let it melt. add the flour and let it cook a little, stirring constantly. little by little, add the milk in order to have a homogeneous mixture. (if you get fat, there’s nothing the magic wand doesn’t solve!) season with salt, pepper, nutmeg and lemon juice. add the cheeses and mix well.
as soon as the dough is cooked, drain and rinse with cold water to stop cooking. wrap with the cheese sauce, place in a dish that can go in the oven, spread some grated Parmesan cheese on top and bake in the oven to brown.
serve hot with a salad
