Preparation

first we make the onion. Cut it into thin julienne strips and poach it slowly in a frying pan with a little oil and a little salt. When it is soft and with some color, add the sugar and stir. we set aside and reserve.

We salt the hake loins, we pass them through the egg and the flour. fry in abundant oil until golden brown. We drain the excess oil on kitchen paper and assemble the lid.
