Preparation
Clean the mutton dough and cut it into pieces of 5 or 6 centimeters.
Crush the garlic cloves with the salt, pepper, paprika, cumin and
oregano and add the juice of the sour orange, vinegar and dry wine.
Pour the dressing over the lamb and cover with the onion wheels and
chili pepper. Let it marinate for at least two hours. Then drain the
doughs, wrap them in flour and fry them in the hot fat. Add the
marinade or dressing and cook over medium heat until soft.
