Preparation

1. In a saucepan with water seasoned with salt, a sprig of parsley and a peeled onion, cook the shrimp, the delights of the sea and the shrimp kernels. (Cook the shrimp and shrimp kernels for about five minutes and add the sea delicacies when two minutes are left until the end of cooking.) When cooked, remove everything to a plate, let it cool and peel the shrimp. Reserve the cooking water.
2. Poach eggs in a pan with a little water.
3. Place the oil, the chopped garlic cloves, the chopped coriander in a bowl and stir. Add the shrimp, the sea delicacies, the shrimp kernels and mix well. Pour the boiling water, put the cut bread in pieces, season with salt and pepper and stir well. Add the egg yolk and mix well.
4. Pour the poached eggs over the mixture and serve.
