Preparation

peel the shrimp, remove the coral. fry the shells in butter, add water and prepare a concentrated broth.

Prepare a dressing with garlic, onion, red pepper, salt and pepper, to which we then add a little concentrated shrimp broth.

In the dressing we place the potato, when they are almost ready add the beans and the corn, at the end we add the shrimp, the cochayuyo and the milk, season.

sprinkle with huacatay and peanuts. serve with white rice.

  • a kilo of large whole shrimp
  • a cup of peeled beans
  • a shelled corn
  • a quarter cup of dried cochayuyos soaked in water
  • half a kilo of white potato cut into squares
  • half a cup of evaporated milk
  • two tablespoons of red pepper
  • two tablespoons of yellow pepper
