Preparation

Prepare a sauce, with garlic, onion, tomato and pepper. Season with salt, pepper and oregano. add the pisco and let it evaporate.

add the scallops and let them sweat for a minute. rectify the seasoning and add a few drops of lemon and chopped cilantro.

  • four dozen scallops
  • two tomatoes, peeled and seeded
  • a chopped onion
  • a tablespoon of ground garlic
  • a quarter cup of pisco or dry white wine
  • a chopped yellow pepper
  • finely chopped cilantro
  • salt, pepper and oregano to taste
