Prepare a sauce, with garlic, onion, tomato and pepper. Season with salt, pepper and oregano. add the pisco and let it evaporate.

- two tomatoes, peeled and seeded
- a chopped onion
- a tablespoon of ground garlic
- a quarter cup of pisco or dry white wine
- a chopped yellow pepper
- finely chopped cilantro
- salt, pepper and oregano to taste
