put in a pot 10 tablespoons of water, sugar and cinnamon. Make a ball point syrup (it is the one that, taking a little between your fingers, can form a ball).
in a bowl, beat the 11 yolks, the whole egg and the grated grated. When the syrup is ready, add the batter and continue cooking, beating constantly, until the yolks are set. remove from heat and turn the dough onto a surface dusted with sugar.
work the dough into a long roll in the shape of a thick cord, sprinkle it with icing sugar. cut it into 24 equal pieces.
form the yolks with your hands, coat them with more sugar and place them in paper for mini muffins (also called liners) or wrap them in cellophane paper.
