Preparation

cut the fish into slices and sprinkle with coarse salt.
chop the onion and garlic in a saucepan, add the olive oil and bring everything to a light browning.
add water, chopped parsley and rice.
when it is opening, add the fish and the sprig of mint and cook.
if necessary rectify the seasonings.

  • 500 grs of snapper, corvina or grouper;
  • 1 dl of olive oil;
  • 3 cloves of garlic;
  • 1 medium onion;
  • 1 bunch of parsley;
  • 1 sprig of mint;
  • 150 grams of rice;
  • coarse salt ;
  • water q.s.
