Preparation
the chicken is cleaned and the skin is removed. the meat, the rib, the bacon and the sausages are divided into small pieces. the tomatoes, onions and carrots are cut into slices. they cook the chicken with the salted meat, adding the seasonings. everything is simmered for about 1 hour. when the meats are soft, remove from the pot and let the broth cool; the flour is added to this, untipping it very well, then the margarine, the chicken and it is depressed into small pieces. Banana leaves are placed on a flat surface. In each one, put two large tablespoons of the broth with the flour and on top a piece of chicken, a piece of each of the meats, the slices of tomato, onion and carrot, the olives and capers, then another tablespoon of the broth and finally, a branch of parsley; the leaves are wrapped and tied very well with a pita. They are put on the fire in a pot with water, letting it cook over low heat for two hours. when they are ready, they are removed from the pot and the pita is cut, the leaves are opened and served. They are usually accompanied with Santa Fe chocolate.
